Hi I'm Wendy. Well basically I love anything you can create yourself, especially cooking. I enjoy testing out my recipes on family and friends. Don't you think home cooking is a much healthier option too? At least you know what's in home cooked food. It scares me when reading the long list of ingredients in packaged and processed items, with all the additives and numbers I have no clue about. If you are reading this now I'm thinking we have a similar belief system. We're not supposed to consume these little extras-right? I appreciate that home cooking can be a little time consuming and we all have very busy lives, and not possible all the time. But it's so much fun and definitely worth the effort! I can't wait to start sharing my recipes with you and listening to your thoughts and ideas.

Sushi


 
I often struggle to find a healthy enjoyable option for the lunch box. However now that I have discovered Sushi is so simple to make, I have discarded the boring sandwiches which always seemed to return at the end of the day.


 Sushi is nutritious and very versatile, you can basically put in anything you fancy and it's a great way to use up leftovers too. Along with being totally yummy I have found that kids love to help make them, but be prepared for them to disappear quickly!

  INGREDIENTS

Nori Sheets
----------------------------------
Sushi Rice
----------------------------------
Sushi Vinegar (see below)
----------------------------------
Tin of Salmon
----------------------------------
Cream Cheese
----------------------------------
Lemon Juice
----------------------------------
Vegetables (Julienned)
----------------------------------
Salt & Pepper
----------------------------------

      INSTRUCTIONS

Place a nori sheet shiny side down onto a bamboo sushi mat.

Cook sushi rice as per packet instructions, cool.

Add sushi vinegar (see recipe below)

Then with wet hands press a thin layer of sushi rice onto the nori, leaving a gap at the top.

 Mix together drained salmon, a tablespoon of cream cheese and squirt of lemon juice

Season with salt & Pepper

Spread the salmon mixture onto the rice in a horizontal line
--------------------------------------------------------------------------------------------------------
Add julienned vegetables along the line next to the salmon
--------------------------------------------------------------------------------------------------------
Using the bamboo mat, roll up the nori, rice and vegetables
--------------------------------------------------------------------------------------------------------
Refrigerate until firm enough to slice into sushi
--------------------------------------------------------------------------------------------------------

SUSHI VINEGAR

Try this homemade version:

--------------------------------------------
1/3 cup of apple cider vinegar
--------------------------------------------
2 tbsp. sugar
--------------------------------------------
1 1/2 tsps. salt
--------------------------------------------
 
INSTRUCTIONS
---------------------------------------------------------------------------------
Heat ingredients together until sugar and salt have dissolved
(either on the stove or in the microwave)

  • Packets of nori, the sushi mat and sushi vinegar can all be found in the Asian section of most Supermarkets.



 
 
 
 
 
You can choose any other protein you like (shredded chicken and mayonnaise maybe).
 
 
 
  Today for my julienned vegetables I used cucumber, carrot and red capsicum. Avocado is nice in it too.
 
Be careful not to overload at this point as it becomes tricky to roll (less is more as I found out!)
 


 
Using the sushi mat carefully roll up the nori and it's contents, starting at the bottom end closest to you and folding the nori over the vegetables while gently pressing along the sushi mat as you go.
